Chicken Lettuce Wraps
Inspired by PF Chang’s Chicken Lettuce Wraps, these are a delicious and healthy lunch or dinner. The chicken filling keeps well in the fridge and can be used in other dishes.

Chicken Lettuce Wraps
Ingredients
- 1 lb minced chicken
- 3 garlic cloves, minced
- Big knob of ginger, minced
- 5 tbsp hoisin sauce
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp sriracha
- 1 tbsp sesame oil
- Pinch of black pepper
- 1 tin of water chestnuts (~140g drained), chopped
- 3 spring onions, sliced (save the green parts for the topping)
- A handful of fresh coriander, chopped
- Lettuce cups (I used little gem)
Instructions
- Add a drizzle of oil to a pan on medium heat. When the oil is hot, add the minced chicken with garlic and ginger and cook for a few minutes.
- Add the sauce ingredients and cook until the chicken gets caramelised.
- Then add the water chestnuts, spring onions and coriander. Cook for another 2 minutes.
- Spoon into lettuce cups and top with peanuts and the green parts of the spring onions - enjoy!
