Spinach Wraps
You only need two ingredients for these spinach wraps. They make a great healthy lunch and you can use whatever fillings you like.
Spinach Wraps
Serves: 2
Ingredients
- 1 packed cup of fresh spinach
- 2 eggs
- Pinch of salt & pepper
Instructions
- Add all of the ingredients to a blender and blend until you have a smooth batter.
- Pour half of the mixture onto a lightly oiled pan and tilt the pan until it is evenly coated with the batter.
- Cook for a couple of minutes on each side.
- Repeat with the rest of the mixture.
- Top with your favourite fillings - I used hummus, pan-fried mushrooms, tomatoes, avocado, and feta.
