Spinach Wraps

You only need two ingredients for these spinach wraps. They make a great healthy lunch and you can use whatever fillings you like.

Serves: 2

Ingredients

  • 1 packed cup of fresh spinach
  • 2 eggs
  • Pinch of salt & pepper

Instructions

  1. Add all of the ingredients to a blender and blend until you have a smooth batter.
  2. Pour half of the mixture onto a lightly oiled pan and tilt the pan until it is evenly coated with the batter.
  3. Cook for a couple of minutes on each side.
  4. Repeat with the rest of the mixture.
  5. Top with your favourite fillings - I used hummus, pan-fried mushrooms, tomatoes, avocado, and feta.
