Fig, goats cheese and walnut salad
This is such a classic combination of flavours, and the honey balsamic dressing really brings everything together! It’s such a simple salad to throw together and looks great on the table for a BBQ or dinner party!

Fig, goats cheese and walnut salad
Serves: 4
Ingredients
- 70g rocket leaves
- 50g goats cheese
- A big handful of walnuts
- 4-5 figs, sliced
Dressing
- 2 tbsp olive oil
- 1 tbsp walnut oil (or more olive oil)
- 1 tbsp balsamic vinegar
- 1 tbsp lemon juice
- 1 tsp honey
- Pinch of salt and pepper
Instructions
- Toast the walnuts in a dry frying pan for a couple of minutes until fragrant. Set aside to cool before roughly chopping.
- Put all of the ingredients for the salad dressing in a jar (I use empty nut butter jars) and shake until you get a thickened emulsion.
- Put the rocket in a large salad bowl and top with the fig slices, chunks of goats cheese and the toasted walnuts.
- Drizzle over the salad dressing and serve.
